Fine chocolate is a living, temperamental product. Because it contains pure cocoa butter and no stabilizing fillers, it responds to temperature and humidity. Proper storage ensures your chocolate maintains its beautiful finish and smooth texture.

Below is everything you need to know after your package arrives

Upon Arrival

Open your package promptly.

Remove chocolate from insulated packaging and cold packs (if purchased additional protection).

Allow chocolate to come to room temperature before opening sealed wrapping if it feels cold to the touch.
(This prevents condensation from forming on the surface.)

If condensation forms, allow the chocolate to dry fully before handling.

Ideal Storage Temperature

Best range: 60°F – 68°F


Maximum safe range: Up to 72°F

Avoid storing above 72°F for extended periods.

Chocolate is happiest in a cool, dry, and stable environment.

Where to Store It

✔ Pantry or cabinet away from heat
✔ Interior cupboard (not near oven or dishwasher)
✔ Wine fridge set between 55–65°F (low humidity)

Avoid:

✘ Direct sunlight
✘ Near stovetops or appliances
✘ Near windows
✘ In humid environments

Should You Refrigerate Chocolate?

Refrigeration is not recommended unless your home is consistently above 72°F.

If refrigeration is necessary:

Keep chocolate tightly sealed in its original wrapping.

Place inside an airtight container.

When removing, allow it to come fully to room temperature before opening to prevent condensation.

What Is Sugar Bloom?

Sugar bloom appears as a white or gray powdery coating on the surface.

It happens when:

Moisture contacts the chocolate.

The chocolate moves between cold and warm environments too quickly.

Sugar bloom is cosmetic. It does not mean the chocolate has spoiled, but proper storage prevents it.

What is Fat Bloom?

Fat bloom appears as streaks or dull patches.

It happens when:

Chocolate melts and resolidifies.

It is exposed to fluctuating temperatures.

This affects appearance and texture but is not harmful.

Shelf Life

When stored properly:

Solid bars: Best within 3–6 months

Filled bars or specialty items: Best within 4–8 weeks

Always keep tightly sealed to prevent absorbing odors from surrounding foods.
